How long can fresh green beans, corn, and carrots last if I chop them up (exept the corn, I just slice that off the cob) in the food processor and put it in the fridge all mixed together. My mom said they would be good for a week. I did this last Thursday (a week ago), and I had some left over. I was thinking of using them in another batch, but I wasn't sure if they were good or if should I throw them out. Opinions please!

I wouldn't use them anything beyond a week. Once you chop up vegetables you release all the juices and they will start to break down faster. Personally I wouldn't use them at all if you have any doubts.

You can try to taste the veggies for yourself and if they aren't fermented or anything, it shouldn't be a problem.

Veggies & fruits definitely last longer if they aren't chopped up and then stored that way.

I wouldn't take a chance where my gliders are concerned. I've chopped fruit and forgotten about it in the fridge (and only for 2 days). It looked okay, more or less (a little mushy). I smelled and tasted it and it seemed okay. Fortunately, my gliders have better sniffers, and snubbed their noses at the fruit, so in the garbage it went.

Why not chop your fruit and freeze it in small portions that will last a day or two? You can take out a container to thaw as you're using the last of one container. That way you know it'll keep. And you should also be able to blend any leftovers into a new batch if you want.

I freeze everything I chop up. Then when I need it it's right there and it lasts so much longer that way. Another benefit of doing it that way is you can chop up a bunch more at a time without worrying about it getting spoiled.
