So we are going to try the #4 CL salad mix. I just bought some beets (never bought/tried them myself before) but I'm not sure what parts get used. Do you use the stem, leaves and the beet in the salad? Do you peel the beet?

The root part gets used. And no need to skin it, just wash it off real good.

Well that was fun, lol. My counter ended up looking like a bloody mess :roflmao2: lets hope the little fuzzbutts like the beets.

I only made a 1/4 batch salad this time (that lasts my 3 gliders around a month) and used half a beet, so 3 beets will last for a while. I cleaned and chopped them all as Peggy recommended and put the extras in the freezer. I started keeping all the ingredients in freezer bags and marked the weights on each bag, then put all the little bags in gallon bags so I always know exactly how much I have to use for the next batch and what I need to buy. Having everything chopped and weighed really speeds up the salad prep time. Doing this every month or two is easy peasy now.

They've never had beets before, nor the squash, so tonights dinner has some nice surprises for them party

If you've never eaten them yourself, you should really try some beet root! I only started eating them in the last year or so, and now they're one of my favorite veggies. Try making a salad of roasted beets (just wrap them in foil with some olive oil and stick them in the oven for an hour) with goat cheese and sea salt. So earthy and tasty!

But yea. They do tend to make the kitchen look like the scene of a massacre, unless you get yellow beets. wink

Yes I think I will have to try them some time. Since I froze the extras already I'll have to pick up some more and try your baking suggestion.
