Yogurt Covered Fruit Snacks
8 oz Yogurt Cream Cheese *** (see instructions for making)
2 cups dried fruit
1/4 cup butter
6 cups of powdered sugar
1/1/2 teaspoons vanilla extract
Directions: *****Yogurt Cream Cheese*****
1. Line a large colander with cheesecloth.
2.Place the colander over a bowl and then place 1 quart plain low fat yogurt in the strainer.
3. Cover the bowl and colander with plastic wrap. Let drain overnight.
4. After 12 hours, hold the cheesecloth and very gently squeeze any remaining moisture out of the cheese.
5 Empty the whey from the bowl and let stand another 8 hours.
6. Place the cheese in a clean container. The yogurt cream cheese is now ready to use.
Yogurt Covered Fruit Snacks
1. Place the fruit in a steamer basket. Place over boiling water, without touching the water. Steam covered for 5 minutes.
2. Combine Yogurt Cream Cheese and butter in heavy bottom sauce pan. Stir over low heat until the butter is melted, cheese is soft and mixture is well combined.
3. Transfer to a large mixing bowl. Add confectioners sugar, one cup at a time. Until frosting is thick and creamy and not dry.
4. Add vanilla extract.
5. Stir in fruit gently. Remove fruit and place onto wax paper. Let dry uncovered, for 4 hours or overnight.
