Yeah, it's me again. XD
So I have my scale, and I have my ingredients for a Salad mix with only the recommended substitutions. But I had a question about the Bok Choy as it's a completely foreign vegetable to me.
How MUCH of the veggie do I chop up? Mostly the green parts? The white parts, or all of the above?

Michelle, I chop all the above. My girls love the white part.
And then I grow the base in a small bowl of water, and feed fresh sprouts once in awhile.

Mine apparently love -everything-. I don't know what it is, but once I made up the salad mix for them they went straight to town devouring the lot of it! XD They're eating far better than they had been before. ^^

I can't find bok choy so I left it out. I could only find light cabbage and wasn't sure if that was good enough. I quartered the salad recipe and it still made a huge amount.

Yes, you can substitute cabbage for bok choy.
