Some people have built cages out of the heavy wire shelving you can get at Menards, Lowes or Home Depot for doing those fancy closets.
I myself prefer HQ cages in green.
If you do fabricate something in steel you will need to seal it in some way or it will rust.

I just want to add to Feather's advise, be sure any material you choose is 1/2 " spacing at a max width.

You can use aluminum, it is the galvanized stuff you want to stay away from.

I just reread your post, (sometimes I skim too fast first time! Lol)
I think it's cool to be able to fabricate your own cage!
If you do make your cage out of steel, you may want to have it powder coated. Rust is a bad thing for gliders, since they rub their cloatia on the cage to potty sometimes, and also mark their territory. It can cause a urinary tract infection (UTI).
Be sure to file all sharp edges, and make it baby safe.
If you do decide to make your own cage, I would love to see pics!
The only other suggestion I would offer is to maybe put it on casters for ease of moving for cleaning.

Thank you!! We're definitely leaning towards aluminum, my husband found some for not too expensive with tracks- so we can make panels for the sides that are easily removed in case they chew on them. Casters are SUCH a good idea! I will definitely be doing that! And I will definitely post pics when we get it done. We'll be measuring and drawing it up tonight :D
